Inspired by our iconic Crème de la Mer, the tart sees a refined combination of depth, richness, umami and freshness through miso, roasted Japanese barley tea, milk chocolate and yuzu cream.

The creation additionally draws a visual and textural connection to Crème de la Mer, with hand-piped cream finishing the tart and a sweet, whipped cream topping the accompanying cold brew coffee. The end result is an elevated takeaway ritual that brings together the worlds of Tarts Anon and La Mer harmoniously.

Our journey began when Dr. Max Huber suffered burns in a lab accident and was inspired to create his own destiny. Aerospace Physicist by day, star-gazer and dreamer by night, he hoped to unlock the legendary healing powers of the sea he held so dear.

In this uniquely nourishing environment, our kelp absorbs vital nutrients (Vitamins K, A, E, and C, as well as magnesium, calcium, iron and antioxidants) and grows up to 2 feet per day, channeling the lifeforce of the deep upward to meet the rays of the sun and the skilled hands of our harvesters.
